The evidence you'd require is found in the most basic calculators. Solar panels convert the energy into electricity which powers the calculator. Physics can be used to determine how much energy, how much space, how much pretty much anything.
I too believe the Earth is spherical because I've watched satellites orbiting the planet with my own eyes. I've watched the Sun and the Moon come together at a given moment to provide me with an eclipse. I've watched the Earth curve when I've been up in a plane. I've got GPS data that confirms the faith. I've got photographs of the actual Planet from outerspace.
All of that evidence leads me not to faith, but to knowledge.
Unfortunately none of this is evidence from my point of view...again I would be relying on second hand information....faith in someone else. How does physics calculate energy? It is based on the equations invented by a human...if we use those equations then we use them in faith that they are true and accurate...faith. You have seen the moon eclipse the sun...that proves that the sun can pass in front of the moon...it doesn't prove the earth is spherical..this linear event could still occur if the earth was flat could it not? Faith. You have seen the curvature of the earth from a plane...this could prove that the earth is a large semi-circle could it not? You have faith the the curve continues until it meets back up at the other end...faith. You have GPS data...this is data generated from software written by a human, you have faith that the equations they used are true and accurate...faith. You have photographs of the earth from space...did you take them yourself? Faith.
Some old book tells you that some sandal wearing hippy went around performing miracles...evidence or faith? Is it any more evidence than GPS data?
Don't get me wrong, I don't believe there is a God as such... but you should approach science in the same way you approach religion...cautiously. Whenever you rely on second hand or incomplete evidence you are taking a leap of faith when coming to your conclusions. Science has been wrong in the past.
