I've had an enquiry from a gym owner in the Ukraine (quite a large order), do I simply zero rate it as per standard EU shipments?

It doesn't affect the treatment, but Ukraine in not in the EC. You simply zero rate the supply as an export, retaining the usual evidence of the goods leaving the UK (The assumption is that the supply is of goods as you refer to shipments - it's better to state exactly what the supply is as rules for goods and services can be different)

As an aside, Ukrainian customs can be a nightmare. Avoid handling the shipping, if you can, and do the job ex-works.
