A did some good blog posts about 2 years ago along the lines of "getting a ...... with defaults in 202x" (ive missed out the bits as I dont want to be creating competiton for myself).

Is there a problem if I do the same thing again each year? I will re-write it from scratch, but ultimately the content will be quite similar as not a lot has changed in a year or 2, it will just be re-worded and based on criteria/rates at the time.

If the content is unique then I don't see why there would be any issue with SEO.

Recreating similar content is pointless and as you say can compete against the original if that ranks, but keeping content up to date and authoritative is liked by Google.

Update the original article post to the current date and copy, then publish it again with the new title and current date.

I agree with Paul.
Going over all of your old blog posts, seeing how they are ranking and performing in search.
Repurposing them with updated keywords of higher volume, improving the content in general and publishing with the new date. If you need to change the URL you can do so but ensure to redirect. I've done a prune recently of over 20 articles that I had created over the past 18 months and had great results, redirecting them to new pages or editing the original.

Did those blog posts generate converting traffic? If so get them updated and refreshed. If not then let them wither and die.
