In my business we've used focus group testing. It costs money but you get great and sometimes very surprising feedback very quickly from watching people trying to use your UI.

I think many businesses still underestimate how much user experience impacts growth.
The key is choosing a team that understands both technology and business goals, not just coding.

My advice would be to keep it simple and focus on the user's main goal. Don't try to pack too many features into the first version.

Also, test it with real users as early as possible. You'll learn more from watching a few people use the app than from weeks of tweaking the design yourself.

Involve the intended users if possible, in the design and evaluation of the app. To keep it simple focus on usability and user experience:

Usability: Who will use it? Are the features and functions tailored to what they want? Where will it be used and how will it impact its use? Can the user complete the activities effectively and efficiently, or does the way the app is create frustration and confusion?

User Experience: It should be fun and enjoyable to use, not dull and boring.

You can get a book on UI/UX, the above is the tip of the iceberg. There are online courses too. I would recommend finding a stand alone uni module in it which has a practical focus.

The existing research recommends 6 users test it, you get the most insights back from that, after 6 its all diminishing returns.

I'd say don't overcomplicate it. Watch a few real people use the app without any explanation - you'll quickly see what's confusing.
