Does anyone have any experience of this kind of device, and could perhaps make recommendations?

I'm travelling next week to the deep South and will have a lot of things to scan which I would want to bring onto my laptop, but as I'm flying I obviously can't take my full scanner...

Looking for something that will scan with the same or similar quality to my HP OfficeJet Pro 8720, but that fits in my laptop bag and can be taken on the plane....

If they are garbage in general, I will just do it on my phone, but I don't like the resulting images that this method produces.

Could you not take a tablet/ipad? There a loads of decent document scanning apps

I will have my iPad mini with me, but like I said in the first post I don’t really like the result from those. Always squint, creates a jpg instead of a pdf, individual files for a page...

If you have a recommendation then I would be happy to try it

I use Office Lens - uses the phone/tablet camera to scan to PDF. It also does multiple pages and allows full sharing. It's good enough that I haven't used a flatbed scanner for over two years.

If I'm having to scan stuff in the car, am I going to be able to get a good quality scan if I can't lie the document completely flat?

I scan most of my stuff on the seat of a black office chair, using the flash on my phone camera. You can use the passenger seat of your car. The black background helps contrast the document. If the upholstery in the car is the wrong colour, buy and black or dark grey card from a stationary store to lay the docs on when scanning.
