I have a new multi-site approx 3mths old, I have submitted it to Google and they have crawled the pages of the sub domains but they are not indexing them. Any ideas why?

The content is unique, however I did copy it from one of my old sites and deleted the products from the old site once copied so there was not any duplicate content issues.

This is the link to use. On the left hand side, under "Indexing" you will find "Pages". Click on that and it should tell you the reasons pages aren't being indexed.

You should be able to click on any of those pages and the Console will provide a summary as to why they are not indexed.

On a side note, Google too has declined in quality when it comes to explanations, help and tool user-friendliness. You may follow some of the links from Search Console to help videos, but my experience is that it's more trouble than it's worth.

That part (Crawled - currently not indexed) is not something you need to worry about. It is just telling you that Google has discovered those pages but it hasn't got around to adding them to the index yet, but it might.
Clicking to 'Fix' this will always fail and not achieve anything. Having said that, you can on a one by one basis add up to (I think) 20 pages to a priority queue to be indexed by clicking on the more info option for an individual page and request indexing - in the area option mentioned by @ctrlbrk above

it takes a long time for your site to appear in search and a lot of linkbuilding and onsite content. For any lame <2000 monthly search keyword there are hundreds of site trying to rank for it. So they just have to cull the herd a bit and only show the best sites.

submitting the site was a thing back in the excite/yahoo/altavista days, submirtting your site directly to search engines does almost nothing.

That can happen if Google still associates the content with your old domain or hasn’t fully processed the removal yet. You might want to check if the old URLs are still in the index and use the URL removal tool if needed. Also, try building some internal links and fresh backlinks to those subdomains it can help signal to Google that the content is active and worth indexing.

It is common for new multi sites to take time before full indexing. Even if Google has crawled your pages, it may still associate the content with your old site until it is fully deindexed. Low domain authority, few backlinks, or weak interlinking can also delay results.
Ensure all subdomains are linked in your sitemap, request indexing for key pages, and keep updating content to signal freshness, indexing should follow as the site gains trust.
