That's because there's no such thing as a good frozen chip.

And they are some of the nastiest cheap rubbish available!

Then use the cheapest and best - fresh potatoes!

All you need is a rumbler and a couple of hand chipping cutters - it is every bit as fast as opening a package and waaaay better and cheaper.

Is the right answer. Then wash them, drain and dry, if possible, blanch them at a slightly cooler temperature until you can squeeze the chip ( soft ) drain, cool and leave to one side, ( there used to be firms that did all this for you and delivered them in large trays ). Crisp them up in hot oil for a minute or so. Proper chips, job done.

Good frozen chips "can" exist, but I don't think these are readily available to people like us at the local cash and carry. The big American chain Shake Shack use frozen fries, crinkle cut and they are very good. Also as an experiment at my place once I made my own frozen fries that came out as good as when I do them fresh. I simply frozen the part cooked fries and the next day dropped them into the oil to finish. The fact that they had been cooked in oil meant they were lubricated so did not clump together when frozen.

I respect your business but chips are not very healthy food for children. So, if your main customers are kids from school, then, please make sure that chips is not heavily processed and without too much salt

My main customers are not kids, but I am based next to a school so at lunchtime we get a lot of kids who unfortunately only want chips. They have a full discounted menu with healthy choices and good home cooked meals but they still choose Chips/cheese/curry

lol why are you even responding to that wally? If battered cigarettes deep fried in battery acid is what the kids will spend their money on then sell it. All these bleeding hearts talk about the need for healthy options, but that makes up a tiny part of your business. McDonalds sell salads....they sell a lot more Big Macs!

Whatever you choose to do, put some Red Salt behind your counter - if the chips are crap... Red Salt will help remove the mundane nasty chip and restore people's taste buds... chips maybe naff but with Red Salt... everything tastes better :D ;)
