setting up a cafe

This is my first post and I am looking for advice on setting up a cafe. I would like to open a cafe and I think I have the skills to do so. My parents had a fast food takeaway which I worked in behind the scenes from the age of 11 so I know about hard work! I also worked for many years as cabin crew on longhaul so I know about service! Also I have just left a franchise business after 5 years which was in the top 3 performing branches for 3 of those 5 years - I got fed up as the franchisor got too greedy and seemed to lack direction. However I have not worked in a cafe (though I am in the process of looking for work in one of our local cafes). Can anyone tell me if it is possible to earn a good living from owning and running a cafe and any tips on pricing, what to sell (snacks, light meals vs cakes and teas/coffees and whether for example I should be looking to start up from srcatch or buying an exisiting cafe. Also a lead as to how much profit should I be looking to make percentage wise of turnover. Thanks Sue
