New pay = new contract?

I had a pay increase in Jan, and I am also applying for a mortgage. I have Jans payslip, but have also been asked to provide a contract of employment to support it.

I've worked for the company for 6+ years, and my original contract doesn't represent the increased pay.

Do I get a brand new contract of employment written up with the new pay on? If so, what date would the contract have on it (i.e, the date of my original employment 6 years ago, or the date that my pay changed).

Any advice is welcome :)

I'd not expect a new contract of employment, but a letter confirming the payrise wouldn't be out of the question.

The bank could always contact the company to confirm the salary you're paid. That's been the normal practice with our employees.

The existing contract shows that you have been employed since X and the pay slip shows what you are currently paid. I see no reason why you would need a new contract.

A new contract is never issued for an annual pay rise. You should have a letter detailing your new rate of pay. That, together with your original contract, should suffice.
