Make the image 500x500 pixels for the logo and the banner 650x220... that should be fine. If the images show as poor resolution double the sizes above e.g. 500x500 1000x1000 2000x2000 etc...

Why not go for a 2nd member server (You can't have two SBS2008 servers on the same domain) in OFFICE2. Use this for AD, DHCP/DNS, file & print services. Then setup the Outlook clients to Outlook over HTTP (to reduce bandwidth VPN issues)
