How do they work, before I buy one? Can you delete and add pages or do you have to have it exactly as it comes?

Also, do templates come with instructions as to how to get them onto your hosting etc?
Correct me if I'm wrong but it sounds like you may still be learning how to use wordpress. Basically templates (or themes) will have, or should have, the instructions on what to do. If you already have a site set up using wordpress then you should be able to upload the zipped theme using the admin side of your wordpress area. The theme is then automatically unzipped and you choose or activate the theme from there.

However, the best way is to manually unzip the template (so you end up with the folder of extracted files) and then upload them usually into the theme directory using FTP. Then login to your wordpress admin and activate the theme from there
