However, like I've explained before, we've set up WooCommerce installed various caching extensions and it ran like a dog whatever we did. Out of the box means out of the box. If I took the time to add my own content and nothing else, I would expect the same result. And yes, I'm talking about Wordpress out of the box. You should be getting better scores than that without using wp_rocket. Which suggests a configuration and optimisation issue.Sorry for the slow reply

Perhaps, but I'm a senior developer with about 20 years' experience and my in-house PHP developers are ridiculously good. So I don't think that's the issue here.A lot of amateurs choose WOO (and WordPress in general) because it's "free" and with a theme, you can spin a new website up quite quickly, but unfortunately sometimes being an amateur means you have no idea how to configure a website, for example, optimising images, loading fonts locally, relying on plugins when simple CSS can work and plenty of other mistakes that cause a website to be slow and cumbersome to browse.

Yoast is the same. Vastly overrated and not very good.WP Rocket is often hyped up because affiliates receive commissions from it.
