Start with these:

Most themes will be pretty speedy in their initial configuration. It only when you start adding plugins it all goes awry.

Don't ever install a theme that requires you to add a page builder, slider and other detritus.

But....

You also need decent hosting and a properly configured server along with setting up your htaccess file correctly.

With a bit of work you can easily get a woo site to score 90/100 on Google performance tests.

Woocommerce on its own is a resource heavy plugin. So, it'll also depend on the type of ecommerce website you're looking to build. If it'll require extra functions (meaning you could rely on some woocommerce add-ons down the line), then your hosting needs to be a good one to handle your website.

As recommended above, try out the ones built by the Woocommerce team itself.

If you want to explore other themes (ones that work with the Gutenberg block builder), you could look at the following:
  1. Astra + their block builder Spectra
  2. Kadence + its block builder Kadence blocks
  3. Blocksy + Stackable blocks
All the best!

To properly help we need a lot more information about your business.

What are you selling? To whom are you selling? What’s your marketing plan?

Right now the theme is unimportant. You need to get all your products uploaded, descriptions written, images prepared, bundles and related products organised and the actual shop configured.

Once all that is done you can then think about which theme to use.
