Converting old VHS tapes to digital

Maybe the wrong place to ask - but - I have a load of old vhs tapes and need to convert them.

What have you used to do this both software and hardware

I used a piece of kit like this. One problem I found is that sound is kept separate from the pictures, so you can't extract a scene from the finished file.
