I'm trying to launch a site selling products from other websites.

Is there an easy way to track what links users click on my site that redirects them to another site?

You can use Google Analytics event tracking, even better still, configure it using the new Auto-Event Tracking in Google Tag Manager > http://analytics.blogspot.co.uk/2013/10/no-code-required-auto-event-tracking.html

I'm looking at affiliate through the normal route and also products direct from customers websites based on XML feeds.

Would the google analytics work on a wordpress theme?

Yeah Google Analytics will work fine in Wordpress.
