As an employee of a company, my role will mean I will have to travel to other countries or even elsewhere in the UK to meet up in person with potential clients at their place of work or home.

For example: I travel to Spain for 3 days, stay in a hotel and meet up with multiple clients than fly back.

I'm assuming this can all be claimed back by the company and any money they pay me for these trips will not get added on to my salary? The reason I'm asking is because i've just been declared bankrupt and any extra income I earn I would have to declare and make a contribution to my creditors.

AFAIK (having had a job where I travelled extensively), your expenses are not treated as income at the time, but they will be put on your P11D and if HMRC deem some of those expenses as not claimable (e.g. the bottle of Chateau le Ha Ha for your client dinner), then it may be treated as a taxable benefit and you may be liable for tax, but I am not sure it would be treated as income for disbursement reasons..

Back in the halcyon days of the late '90s, I use to work for a software house/consultancy and averaged about £8k/month in expenses. All reimbursed and declared on the P11D.. no tax owed.
