In the lingo, any business has to control their trade waste- criminal offence not to as far as I know. The way to do it is to get a trade waste contract with a firm that offer this. They'll pick up your waste.

You are not allowed put trade waste into the domestic refuse, even if you take it home etc. You can't really share a bin with another business, if you want to be able to prove that you are controlling your waste, as you won't have the right paperwork.

If an authorised person asks to see them, for instance an env. health officer or some other council person, or the environment agency or a policeman (unlikely) , etc etc., you need to be able to produce waste transfer notes- they need to be kept at the premises ready for inspection. Your waste co. will give you these, maybe a blanket one for the year if you only produce a small amount of waste.

Trade waste isn't covered by business rates at all, by the way.

The environment agency used to police this-then it switched to local councils. As a food biz you will be registered with the local env. health people- they will advise you and may have a list of suitable trade waste companies.

500 quid fine magistrates court more or less, last time I looked, some councils do fixed penalties, can be 300 quid.
