Professional cleaning regulations for commercial kitchen

Hello,

Ive just took leasehold on a commercial kitchen on a holiday site.

Im wondering about the law in regards to commercial cleaning of the kitchen and equipment. A local cleaning company paid me an unscheduled visit (strange) to offer his services. He said that, by law, I must have my kitchen professionally cleaned every 6 months.

I have tried to look it up on the internet, but to no avail.

Can anyone who has any knowledge help me out on this?

I'm in Scotland and the rules may be different her,e but that sounds like bollocks to me. Your basic food hygiene certification (which you need before you can sell to the public) will tell you all you need to know and the council may want to inspect (that may take a while as it's an existing kitchen, they're hotter on new ones) and they will explain everything you need to know.

Basically, it's common sense.

Yea pretty sure the guy is trying it on. You are required to meet hygiene standards but if you do that yourself with a scrub brush and bleach/soap it is just as valid as if some "professional" does it. As always, talk to the relevant dept at the council for confirmation of what you do/don't need.

He is of course, lying.

By law, you have to have a clean kitchen at all times. That means that it has to be 'professionally' cleaned by you and/or your staff every day.

There are all kinds of rules, such as those governing air extraction, lighting, fire alarms and fire extinguishers, emergency exits, emergency lighting and of course, the separate keeping of cooked and uncooked items, esp. meat and fish. At first sight, these rules may seem daunting, but the reality is that they are all based on common sense and are individually, easy to comply with.

As @obscure points out, your local council will tell you which safety, first aid and food preparation certificates they will want to see.
