Can I ask why there is no real chain of pancake cafe/shops?? Why do people insist that nutella and banana is an interesting filling. What is to stop someone setting a similar style pancake shop in nature to krispy kreme? for example a lemon meringue pancake? strawberry cheesecake? banoffee? calvados apple strudel? Maybe incorporate milkshakes but some kind of chain which the teen generation would really buy into?

Savoury pancakes are also nice, they don't just have to be sweet

This is very true but doesnt really fit with the vision I have. I would think to explore the festival style arena like ben and jerry's have managed and go down that route and that sort of brand.

I seem to remember a pancake shop in Durham. They did both savory and sweet and were more of a restaurant. Very popular I recall.


And of course there are tourist crepe vans with interesting fillings.

There are tourist vans with very uninteresting fillings. I have been to nearly all pancake houses/ travelling pancake vans in london as part of my research. All very boring and similar, definately a gap in the market.

Yeah, also crepeaffaire. But the standard is shocking and still very boring. Strawberries with ice cream wow, fruit salad - really?? and also look at the prices?????????

I want a lemon meringue pancake for £3, where can can i get this?

(But some lesser mortals do enjoy what is currently available - I certainly enjoyed the crepe I had in Bristol, However I hope you raise the bar. And I will enjoy going to higher culinary delights! So don't rubbish what is here now. Look at it this way. They have paved the way to people accepting what you want to do. Build on what has gone before, don't tear it down )

In the tourist area, dare I admit I had malteser filling!

Got chocolate from ear to ear, glad no one saw me!
It was an exciting day though also because my son got an offer to study at Bristol. He has just graduated so it would be about 3 years ago.

It seemed novel to me as I had not come across a crepe stall before.

Problem with crepes is that even if the margin is quite good, the selling price is not that high. So you would need to sell hundreds of them / day before reaching your break-even point.

Cooking nice crepes requires also real skills so staff is an issue, you can't hire the firsy guy in the street and pay him rubbish...

I used to love the Pancakes shop you would get all over the place, no idea what happened to them. I know when I'm over in Canada I visit pancakes shops as much as possible!
