How to preserve curry paste for longer life?

I am looking to make curry kits which has everything to make various curries. However I have a question, how do I make the pate to ensure it last a few days or longer like the pastes you get in the jar at the supermarkets?

By putting them into sealed jars when hot.

The Byre is correct but it's slightly confusing to instruct someone to put something into a sealed jar! If you put a piping hot food into a jar and twist the lid on, when it cools down it creates a vacuum and the jar seals itself so that the lid dimple is sucked in.

Will the consumer regs and legislation be satisfied by "wack it into a jar when hot"?
I don't know, but it seems a bit laissez faire for the EU and the UK.
