I have had subsidiary websites for years taking advantage of exact domain name matching but since Google now discounts them I have gradually got rid of these sites as none of them rank very well any more.

I got rid of one site about nine months ago by recreating the half dozen pages as blog pages on my main site rewriting them as I went leaving redirects on the site to the new blog pages on my factoringsolutions site.

How long is it worthwhile leaving the redirects up as I would rather just delete the whole Wordpress site for the original domain rather than paying for hosting that isn't really used

You can find various options, usually from six months to one year. I saw that Google recommends use redirects as long as it possible. Googler John Mueller says https://www.seroundtable.com/google-one-year-301-redirect-20893.html
We all should understand, Google is a bunch Python code and there are many issues. A site owner deleted redirects and he saw old URLs in the SERP. Also Google can set redirects by itself. So, keeping redirects about one and half to two years is a good idea.
