Hand over takings collections, which services?

I'm looking for those services where you can hand over the takings of your website when people checkout or buy something, this service company at that point invoices, at certain intervals, the website owner witholding a fee for their services, removing the website owner in fact from declarative tax burdens (I suppose).
For the life of me I can't understand how to find these kind of services, anyone knows at least the keywords I sould use to Google them?

Ok I may have been able to narrow the Google search to something like third party processors. While I sift through the google results, if anyone has experience with these feel free to suggest a general or specific service/company. We're talking about low volume transactions.
