Hi Guys

I was wondering is there anything specific you need to do, to get listed and indexed by the various other googles out there i.e google.ie / google.fr google.IT etc etc

Europe is a market I'm tapping into with adwords but I want to make a big push and for free for Organic traffic

I assume that you have your pages available in different languages for the countries you are interested in. You will find some useful information in Google support on how to explicitly tell Google about that if you search for ' Getting listed in google other langauges'.
I would have given the actual support page URL but apparently I am not allowed to post links!
I also get my clients to register the equivalent domain name for each of those languages (mine.uk, mine.ie, mine.fr etc). I have no idea how helpful that is but it costs relatively little and should help.

Local language and domains worked well for us. I assume you're doing this anyway if you have adwords targeting these countries?

Not doing any of the above it, other that adwords targeting countries that are currently buying from us anyway.

Our next step will be a language selector.

Maybe things have changed since I last looked at this, but I thought I had to do something specific to get on Google's national pages

any recommendactions for Magento sites?

What you are trying to do is called international or multilingual SEO (depends on if it requires different languages or just different countries but on the same language). There is a lot of moving parts to it, but here is a good guide: multilinkbuilding.com/the-ultimate-guide-to-international-seo-and-link-building/
