Foodstuffs import and distribution

Hi all, my first post here and it's a complete noobs post at that.Here goes:
I've come across a food supplier on the continent and having tried a couple of their samples am impressed. I contacted them with the question of availability here in the UK but I am informed none such exists.
The company itself has a large product range much of which has its available equivalent here however, the product I am looking at has nothing comparable in taste although there will again be similarities in style and substance.
I am aware I need to establish a market and come up with projected sales figures and region for selling these items. I was thinking along the lines of the artisan delicatessen type shops as a definite market but thought perhaps the higher end chains like John Lewis would, if persuaded provide a far better volume of sales.
So, I'm thinking I need to get a selection of these items , and in a quantity sufficient to my needs and (potential) customer base and start putting them out to the buyers/owners as samples to gauge interest.
Will I need specific import licences and have I got anything like the faintest idea what I'm doing?
The main thing I'm interested is a fantastic condiment that while it has its limitations, what it does, it does very well indeed and several people have tried it and remarked on its flavour and subtleties. Granted, this is but one product however, it is backed up by other items that I shall be testing myself to check for suitability from the same stable.
The providing company have a large product range and appear reasonably well established. Do I need to check their viability and trading figures or is that the least of my worries right now?
Forgive me my naivety but I've never been to business classes and I want to know, if, any of you can see a positive in here.
