Employing a foreign (russian) worker

Can a private limited company employ a russian worker who will be working in Moscow without moving to the UK?
How can a salary be paid?
What documents are needed?

I suggest asking a Russian accountant about paying them. If they are not going to be working in the UK there shouldn't be any problem at this end.

Have him as self employed and just invoice you every month if that's allowed over there

I would keep your bank advised on what you are doing as they are strong on money laundering and just close suspected accounts without giving a reason so best to work with them
