There are only certain types of documents which you have to keep for any length of time however "it may harm your defence if you..." destroy records (which you are entitled to do) but then cant prove what was said/ done etc.

We have a massively complex records management policy but most customer records are kept for 3 years for basic communications (from receipt) and 6 years for anything which could be deemed part of a contract (from end of contract)
