Burger Vans

Got an odd question for you guys. I am in the early stages of organising a pretty large music event at a UK University. As the campus is huge and private property I was wondering if I would be allowed to have burger vans parked outside the event to cater for the revellers. Furthermore I wanted some advice on whether it is acceptable for us to charge the burger vans for the right to sell a our event and if so how much they would expect. They will have access to a stream of people coming and going from 12pm to 1am.

Well, if it's private property, then the university would need to give approval. Every music festival make a sizeable amount from the catering side, as do the many other big public events. If you don't actually know how much these things are, then why not invite selected businesses to tender for the job. Provide them with the anticipated numbers and age groups, and ask them to make an offer. They may seek to restrict the number of others in the same line, so you don't just do burger vans, maybe you should look more towards liquids too? Go to a big event and canvass the catering people - there are so many specialists now. ethnic or country style food - just look at any Sunday Market - there are loads of people. Just go out and find them, and talk to them. Once you have a few quotes coming in for the value of the pitch, you'll have a better understanding. At major festivals the amount of money spent on drink and food is amazing, so making money is not that hard. You could do a deal as a percentage, but how will you monitor it? Impossible without standing there counting. Charge them for the pitch.
