So my VAT is due and I pay it from my phone and send them £105 extra by mistake, will I just be £105 in credit and pay less next time? Id be fine with that, I just hope I dont need to start ringing them up....

Has anyone done this before?

If you are on MTD, getting a refund from an overpayment is far from simple. I did phone them, and despite them trying three time, it never happened - then suddenly the refund happened, and next day I had to send them my next VAT payment - which still means the account has a random £30 odd pound credit. With the way its working, I would do what you suggest - pay the difference next time.

My accountant told me three months ago that HMRC has calculated that they need to give me a refund. I chased the accountant and two weeks ago...

"Unfortunately, HMRC has a back log of refunds, and the estimated date I was given was 26th June 2020!"
