Accepting T&Cs

If you are selling to the general public (ie it's not B2B transactions) then whether there is a signed contract or terms or not, if they pay then they are agreeing to t&c's and are forming a contract with you. If the transaction takes place in any form other than face to face you MUST allow 7 days from the date they received the goods or the services started for them to canx, this is all in the distance selling regs. By sending them your t&c's you are meeting your obligation to supply them so that's all good.

If it is B2B transactions then by saying they agree to t&c's by making payment is totally fine but i would make sure that is IN your t&c's also and not just on your emails.
