Hmm, I spoke to someone and they said depends on how many seats in relation to your business? eg if 90% you business is takeaway but you have 10 seats for the 10% that eat in, its ok for A1 (if you serve say 1000 a day)

I am opening a bakery and was looking at similar values for sourcing my ingredients and did some research.
Organic is quite big in affluent areas and eg London City Centre but as you mentioned there is generally an inflated price that people have to pay hence appeal is limited to those areas...
I think organic food, ethically sourced with local produce is a winner that people recognise.
Local produce is probably an attraction that covers a broader range of people

Thanks Ginantonic I have managed to go through some old posts and have managed to fill in some gaps but I think my business is slightly different. Alot of the conversations their tended to be on mobile sandwich delivery, mine is bakery/sandwich/eatery, upmarket too.
