A couple of the businesses I've spoken to are going to be hit quite hard by the shipping updates on Amazon, surcharges are in excess of £12 for some locations and pallet deliveries are extortionate.

Just to make a small point, OpenCart on a VPS, is that not overkill?
Although that's probably a daft question if you're transferring over 5Gb of data in a month and that's a "good problem" to have :)

I'd not just focus on one factor, but its the combination of lots of lots of little things put together, such as the quality of the content pages, phone numbers, contact forms, a half active twitter account, a decent looking site, good layouts etc... and maybe a site seal.

Just rename your home address.
So "396 Charlton Avenue" becomes "Bond House, 396 Charlton Avenue"
As for the phone, SkypeIn is "OK", and you can pick numbers from all around the globe (and within the UK too) but the quality is awful.
