Just wondered if any of the IT guys could tell me about the text meta tag combination. Is it the case where content should reflect what is in the meta tags or is it something else all together?

Title and meta tags should reflect the content of your site yes. It's a very deep subject with a lot of information to take in. Try http://www.searchengineforums.com/ if you fancy some light reading on the subject

Most modern search engines apply very little weight to the content in META tags.

This is due to spamming of phrases within them in the early days of the web.

Title tag is still important with many engines, but don't worry too much about META tags these days.
