what would you say the best internet business website to start would be? Which market do you think will be moving the most in the next 5 years?

Now anyone who can answer that isnt likely too, they'll be too busy getting it set up well in advance of the competition

Saying that, there is a number of keynote reports available from places like BusinessLink on various market sectors. These reports show you what aspect of which market sectors are growing the fastest, but you do need to chose a market sector first.
The reports are also quite expensive. I've just paid £960 plus VAT for one report!

Surely if you offer something different and capture the mood and imagination of the client base in that market there is no ‘best’ business after all there has to be a market leader earning millions in every market.
