301 redirect - merging sites

I have one main Site A
and a second Site B

I want to 'shut down' Site B
transferring all products into a section of Site A

As it's not a case of changing domain name as such, how am I best to set up the 301 re-directs?
I'm assuming that a global 301 re-direct wouldn't be appropriate.

Any pointers would be very much appreciated.

Simple really,

option 1) Create a list of all URLs on site B and targets on site A and create a 301 for each
option 2) If there is some sort of possibility of creating a 'mapping' e.g. B.com/product1 -> A.com/section/product1 that can be applied consistently create a rule that maps accordingly

I guess the 301 re-direct has to be in a specific format - any examples or links you can share to save me googling and getting the incorrect information?

In fact nearly any article on 301 redirects, they are rarely 'wrong'

Thanks for this heads up Alan. I know that 301 redirect is not a simple thing to just implement, but analyze to make appropriate action.
