The recommendation for .org over .com is in relation to WordPress not his own domain name. The TLD's for WordPress are used to differentiate the two versions.

Fully back this approach. Guest blogging is one of the best ways to build traffic and links (at the moment). John Marrow provides some good tips for Guest Blogging on his website (just add .com to guestblogging for his website).

I quite like the look of the Happy Kids theme on the link you posted. Though ThemeForest is quickly becoming the bane of my WordPress development. I love it and hate it at the same time. Or rather I hate some of the "frameworks" the developers decide to use.
I'd recommend a WordPress website with Woocommerce installed. That way you can manage the website yourself and add new products as and when you need to. You'd be looking at £400 bare minimum I recon but it would be a very pretty and functional website.
I also find that Contact Form 7 is another great plugin.
If you're interested in building an email list then I'd recommend signing up to MailChimp for the free account (only down side is you can't build AutoResponder campaigns on the free account) and then install MailChimp for WordPress Lite...

I think if you're going into business with someone then you need to be able to trust them and know you can rely on them. Also you'll want to set everything out in a contract such as expectations, profit share etc.
