I'm aware that everybody has a 3K allowance that they can gift to a person or persons and they don't have to pay tax on that.
My question is can the 3K gifted be taken off profit of my business as an expense?

Year 1 claim = £1800 (total carry over to year 2 = £8200)
Year 2 claim = £1476 (total carry over to year 3 = £6724)

When you say 'the accountant does the books' , what do you actually mean. Do you just hand him a box of receipts and invoices and let him figure it out?
I was considering talking to an accountant but I log all income and expenses on a spreadsheet which then calculates profit. So I don't know...
