You should first prepare everything before you do the actual serious marketing venture. After that, you can choose few techniques which would best suit you. I believe that viral marketing should be included in your options.
I think everyone would appreciate kind moves. But it pays to ask your clients about that first. We surely do not know how the minds of the people operate. What could be good for us might be bad for them.
I'm not so sure with the effectiveness of handing out flyers anywhere. But in case you are going to go for it, it would be better if you pay on a per hour basis. Or you can do a base pay plus the commission.
I have to agree with Extremeld. To me it just sounds like it would be more effort than it would be worth. That being said, you won't know until you try. If you live that close to the businesses and want to shed a few pounds then by all means. If it doesn't work out, then try a different avenue.

I looked into it before, but ultimately (like many others) decided that it was a price-tag I simply could not justify spending the money on. Id rather use that money on more efficient offline methods of marketing, like direct mailing, postcards, etc.
Environmentally friendly products certainly have received a lot more attention over the years as we start to become more environmentally conscious. That being said I get a lot of good responses from reusable shopping bags. People love them and then you know they will use them when they go out...
