Omega-3 is a popular topic in the health community which could be a factor. Check out google trends for variations of that phrase (and others) to show what the general popularity of those searches are. Agree with fisicx though, it's well presented and has good links.
Google spreadsheets allows you to do it really easily for free @JEREMY HAWKE and it's as simple as popping their email and name into a spreadsheet and clicking a few buttons.

I think there's a market for it in poor coverage areas, certainly. So much handier than having no access at all. I'd say you would want to market it well though.
