    I think that Wordpress is ideal as a CMS if you want to get your site up-and-running fairly quickly. There are loads of free templates to choose from, so you don't have to fork out loads of money for a web designer. And there are plenty of useful plugins as well.

    How much should i expect to pay for a simple web-site

    I would definitely recommend a look at the Laymyhat.com forum. There's loads of information and advice on there about holiday rentals websites and how to increase your sales. I don't subscribe to the view that you need to spend hundreds and hundreds of pounds to get a simple, half-decent website.

    hyphens in domain names + Google rankings

    I don't know anything about the effect on Google rankings, but I think hyphenated domain names are gradually becoming a thing of the past. Without hyphens, it's a lot easier to tell others what your domain name is.
