Looking at this from another angle could this be a medical issue? I'm not a doctor but to me it sounds like the boss has some form of mental issue, and needs constant reassurance because of it.
How you would broach the subject to the bosses employer I have no idea.
Just an aside but "nubuck brown" could be seen as a description of colour, not the actual material.
If that is how it comes from your supplier have you asked them if the saddles they supply are actually Nubuck or if it's just a descriptor fo the colour?
I use the pemium version of Eset Smart Security, which is an all in one virus, malware, browser protection software which also includes a password manager. I have it on both my desktop and smartphone.

Perhaps the best thing the OP can do is seek out a marketing and advetising agency who can target his chosen market rather than being a jack of all trades and trying to do the advertsing / marketing side of things himself.
I would very definitely read the PayPal T&C's before doing any of the suggested ID methods in the above post. Their (and Ebay's) T&C's are all that matter if you want to protect your money.
Search "seller protection" on PayPal (it's sure to be something similar on Ebay).
Just an observation as I'm no expert but you could for the moment hang on to the property and charge a rental for it from the new company. That would save them a whole heap of cash up front and you'd still have the asset which may or may not be useful to you in your revised circumstances.
Could you move the sweet stuff baking to the premises and have the part time staff do it instead of you? Also wold staying open later so you catch the evening commute crowd help? You could maybe shut for a short time, morning or afternoon to make up for it and do the baking then?
The odd names can work, I used to deal with a medium sized computer hosting & PR company called Blue Satsuma. The odd compbination of words also makes domain names and social media easier to come by.
Perhaps an odd name combined with a word like 'tech' or 'support' or 'IT' could work.
You need to look at other outlets as well. Don't be afraid of selling off job lots if you can't shift lots of little items you can pitch them at boot fair sellers. Sell other stuff through offline auction houses most have general sales that are idea for getting rid of hard to sell or bulky...
The paypal business credit card (if that's what you're talking about) is just a Mastercard which any reader should take. If you're talking about taking paypal payments you don't need a card reader, that after all is the point of paypal.
Just an observation really as I know nothing about IP. Would there be any milage in getting in contact with goliaths co-branders? See if they want to be associatied with a company that thinks nothing of crushing the little guy.
Also if they're using images of your trademark on the packaging...
One tiny glimmer of hope for the OP if you're based near Wales then we still have the 30 people can gather outside (socially distanced) and not be related to each other rule. Perhaps you could make something of that?
The only problem of course is that rule might change before you get organised.
If you're just using paypal for all your income then you can download all transactions as a csv file which can then be imported very easily into a spreadsheet.
