Do they not have software that integrates directly to shopify I think using a csv is a little old fashioned. We use a WMS system which connects our clients directly to shopfify no need for spreadsheets or anything

No, you do not need to open a French company. You just need to register for VAT where the goods will be stored. Then if you want to sell to the rest of the EU you need to register for OSS. If its a route you want to go down let me know I have some great contacts that can help
Don't be put off if your are holding stock and not offering a drop ship service.
