    May be a bit late, but the contract you signed should state exactly how notice should be given. Usually contracts state in writing sent by recorded delivery. To be sure I would do it this way, rather than email.

    It's a niche sector and you'll usually find the fees charged will work on a sliding scale proportionate to the starting salary. I'd imagine 12-25% would be normal for perm, but that's a guess.     We had a local 'spit and sawdust' type bodybuilding gym near us. It had to move with the times and much to the dismay of many die-hard members, built a women's only section to the gym with treadmills, power plates etc. You may need to decide if there's enough demand from your expected clientele.
