    Starting up a new cafe is going to be expensive. There's fitout, machinery, regulations (per above), food supplies & at least three months' working capital buffer required. I would suggest figuring out how much it's going to cost and see if you can get funding to launch.

    A £65k (and growing) turnover business is not a hobby. The business has to be registered with HMRC. There is no grey area here at all.

    You will only get punished if you break the law. As explained to you on your other thread, you can open up a UK company but if you direct and manage operations from Italy you will likely establish a tax branch over there and the Italian tax authorities will assess your business for tax anyway...

    What will be the substance of the business in the UK? It sounds likely that your agency will end up with a branch in Italy as you will be doing all the work from Italy - so corporation tax will become payable there anyway.
