I am about to employ someone for my start-up as Volunteer. This person is on Student visa and is ready to work 20 hours at a pay of National Minimum wage of 12 hours, which is what I can also afford because of tight budget. One of my friend has suggested I can make a contract of 20 Hours out of which 12 Hours is paid and 8 is unpaid / volunteering.

However I think mentioning any time for volunteering would be wrong and probably we are better off mentioning only 12 hours. In the later case however if the person actually works for 12 hours, how do we ensure that he would not later claim for additional 8 hours? Would it help if we ask her to submit weekly time-sheets signed and returned?

Any help would be appreciated.
