    If we are buying services from Europe through a UK supplier, then we sell them onto a European customer, should we invoice the UK supplier in euros excluding VAT, as we will need to do this for the customer, then the whole transaction is in Euros.

    This would mean we would not have to worry about the exchange rates

    Why are you invoicing a supplier?

    Assuming you mean "pay the supplier", are they happy to be paid in Euros? if not, then you're either going to have to take an exchange risk or invoice the customer in Euros. Or hedge/insure the payment, but that's going to cost.
