I can highly recommend CS-Cart which I use for both my stores: metrojoe.co.uk and thetoyfarm.com and have found it to be both feature full and incredibly easy to use and master.
At $195, you can't go far wrong plus you get 30 days free support to help you through the teething stages. Plus there is a fantastic community forum where members actively help out fellow CS-Cart users anyway they can.
There is a new release (1.3.5) currently in its Beta phase which looks to be mighty impressive and has addressed many of the issues and feature requests from the community.

If you want the ability to change the design (significantly) and have full control over the code then go with VPASP (www.vpasp.com).
I've tested dozens of ecommerce software packages and VP wins ahead of them all.

I would also recommend litecommerce. It is a easy to use package and has the UK tax system covered. It is made by the same people as xcart. It is NOT suitable for large (over 2,000) products as it gets slow.
I find that if you like to tinker and amend and heavily change a cart then xcart is better, but if you want a package that does most of what you want then Litecommerce is better.
That said you have not said what you want to sell, how many products you envisage, how many categories, what design control you want etc etc etc. All of which will have an effect on what cart is best FOR YOU. We are just saying whats best for US.

CS-Cart looks nice. The point to consider for ANY cart is what YOU need. Litecommerce looks almost identical to CS cart and is cheaper. BUT cs-cart has some features that LC does not. BUT LC supports a lot more payment gateways, including UK specific ones.
The only thing that always worries me is the lack of telephone contact or address on a vendors site.

There are multiple gateways supported including Nochex, a very active forum and a great support ticketing system. The dev. team are based in Russia so as long as you can handle the timezone difference, you're OK.
I arrived at CS-Cart after wasting weeks on OS Commerce and Cube Cart. Not tried Litecommerce but I'll take a look as not all clients want the top heavy features that CS offers.
