What sites or applications help convert websites to an iPhone/iPod Touch page - helping customers visitors to browse my site?

dont think there is one, you can detect the browser type on your site though and alter content/re-direct accordingly.

Yup, wordpress will do it. I have used a plugin called wptouch which renders the site much like a simple text based system.
If you have an iphone, check out www.justramit.co.uk in a browser and then on your smartphone as popped it on there for a client.
