If a company makes an employee go down from say.. 5 to a 3 day week, what rights does that employee have to earn for the two days lost?

If he feels the work is there, would it be ethical for him to approach the companies customers? - I suppose this is counter productive anyway, but I think it's a growing scenario!

IMO it depends what is in the company's terms and conditions of employment. It may say you cannot carry out any other work unless you obtain the company's permission. As far as approaching company customers, this could be considered as breaching a confidence as you would not have known the company's customers had you not worked for the company in the fisrt place.
