For my planned business, I need a pupose built building, and design etc.

As the majority of expertise lies in Canada and America, what is the process of getting legally binding contracts which can enforced across nations. Typically UK - US, or UK - Canada.

Would i be running any rinsks using expertiser in another country.

You want to make sure that the governing law of the contract is English and that the parties submit to the jurisdiction of the English courts, or submit to arbitration. That deals with the jurisdiction. You still need to bear in mind that you would have to enforce any ultimate order against the foreign company over assets in their country. Since all that is expensive, it pays to make sure up front that your partners are reliable and decent. Drafting contracts like that is not difficult. Get in touch if you want a bit of guidance.
