Although our traffic on our website is pretty steady we can go some days with very few orders and then another day we are inundated... any ideas why this would be happening? Its not as if we are changing prices or anything just seems very odd indeed.

What are you selling?
Some are based on days of the week i.e. for a hydraulcis company I have as a client, they have quiet Sats & Suns because people searches from them generally work 9-5 mon-fri.
Friday afternoons can be strange traffic days in some industries - for example some people leave work at lunchtime so business websites get less hits. Consumer websites may get more though as everyone 'winds down' from work.
Let us know what industry you're in and what days are quite & I'm sure a load of us on here can give some suggestions/explainations - they might not be correct but might just highlight something interesting.

No we don't do any PPC so its not that... our website is dvd-and-media.com

Thats the way it goes big nose! We have that same. conversion rate of 5% one day, 1% the next! :D

Agreed business is different on different days, Fri-Mon is usually the peak, and then lunchtimes and after 5pm when people have time to surf.

I also find that the first Monday of the month is one of our busiest days.

Thats the way it goes big nose! We have that same. conversion rate of 5% one day, 1% the next! :DSimilar here, Tuesdays are terrible for us, always have been and have never been able to change it. I even changed our newsletter day to Tuesdays and that didn't work. Accept it, move on and utilise the spare time (in our case on Wednesdays) to do something more wothwhile than worry.

I have gone from a minimum of 40 -50 orders a day (every day for the last 5 years or more) to only 5 or 6 orders in the last couple of days - thats how I know something has gone wrong!

So it's a drop in orders then, not a drop in traffic or both?
Ideas:
new competitor on the scene?
Is your pricing in line with competitors?
Some kind of recession in your industry?
....

No thats not the point at all.....

Have you put some test orders though on your site to check everything is still working ok? - I always do this if it goes quiet.
Can you see when you get failed orders on your system? That way you know if you are getting that volume of orders but they are failing or leaving during checkout indicating an issue and you can follow it up directly with those customers to see what has happened.
Are you still placed on the same pages on google for your keywords - there was an update recently.
Has there been a new competitor, or is there a competitor who has drastically reduced their prices in the sale and running promotions etc that your customers may be going to?
